Delicious Meatless Wraps

You will need:

1 Sun Dried Tomato Tortilla per wrap
1 Sliced Advocado per wrap
Garlic Hummus
Green Onion
A slice of red and green bell pepper

Spread on the Hummus to cover the tortilla.
Chop up green onion, the red and bell peppers, and advocado.
Put them on the tortilla.
Eat and enjoy!

    Do you make your own hummus? If not, you should consider it.
    Put a couple of cans of garbanzo beans, some (maybe a couple of tablespoons) of tahini, a clove or 4 of garlic in a food processor and blend. Add olive oil until it looks the way you want it to look. You can add lemon juice and zest, cilantro, roasted pine nuts. . . whatever pops your cork, really.
    I always have some in the frig and it's never the same twice. It's just too good.

  2. Pumpkin soup.
    This is so good it might make you cry.
    I used half a good sized pie pumpkin (small for a pumpkin), cut up with the peal removed. I cooked it in just a tiny bit of water. You could steam it, too and just add more liquid later. I grated some fresh ginger into it, added some nutmeg, lemon zest and a little lemon juice. When the pumpkin was soft I put it all in the food processor, added some half and half and honey.
    Oooooh, I think I have a little left in the frig. I think I'll go get it now.
